  10. Roll out the dough and transfer to a lightly floured surface (I just left a clump of dough and put it back where it started), divide the dough into 2 equal blocks.
  11. Cover the dough and let it rest for 10 minutes. He needs time to recover from the blow and split in two.
  12. Grease a baking sheet. Decide if you want to dust your oiled baking sheet with cornmeal and go for it. Roll out each half of the dough into a rough rectangle, starting on the long side, roll up the dough and close.   16. This is optional, but I recommend mixing the egg white with 1 tablespoon cold water and brushing it over the loaves before baking and returning to the center.
