Instructions for making cibatta bread

  1. Make a sponge. Mix the biscuit ingredients in a medium bowl. Mix well. Cover it with a plastic lid. Let stand for 8-12 hours.
  2. Make flour. Mix the cookies and flour ingredients in a mixing bowl. Stir with a spoon for two minutes. Continue to stir gently for another 4 minutes.
  3. Change the flour hook and knead for 10 minutes.
  4. Pour the flour into a large bowl and cover with cling film. Let stand until doubled, about 45 minutes.
  5. Add flour with a spoonful of oil. It rises and folds to the middle. Rotate the bowl 90 degrees and fold it again. Repeat this step 6 times.
  6. Cover with cling film and leave to rise for 30 minutes.
  7. Repeat the assembly step again. Cover and let rise for another 30 minutes.
  8. Place the brick on the middle shelf of the oven. Preheat oven to 450 degrees Fahrenheit.
  9. Tear off two pieces of wax paper about 12 x 12 inches. Light flour. Turn the flour surface over. Sprinkle a little flour on top. Divide the flour in half. Shape each loaf into a 11 x 6 inch rectangle with flour. Lay each loaf on wax paper. Lightly sprinkle flour on top. Lightly cover it with cling film. Let stand for 30 minutes.
  10. Place the wax paper with the bread on top of the pizza wrap. Remove the plastic wrap. Sprinkle the bread with water. Sprinkle breadcrumbs on brick. Sprinkle the bread twice more during the first five minutes of baking.
  11. Bake for 25 to 28 minutes. Even brown.
  12. Transfer the bread to a wire rack to cool. Avoid wax paper. Let cool for an hour. Enjoy it!
